Sodium polyacrylate is a white, odorless, and tasteless powder with strong hygroscopic properties. It is a high-molecular-weight polymer containing both hydrophilic and hydrophobic groups. When dissolved in water, it gradually forms a highly viscous, transparent solution. The viscosity of a 0.5% aqueous solution is very high, mainly due to the ionic effect of numerous anionic groups in the molecular structure, which extend the polymer chains and significantly increase the apparent viscosity. Its viscosity is approximately 15–20 times higher than that of CMC and sodium alginate.

The viscosity of sodium polyacrylate is only slightly affected by heating, neutral salts, or organic acids, but it tends to increase under alkaline conditions. The compound is insoluble in organic solvents such as ethanol and remains thermally stable up to 300°C without decomposition. It also maintains stable viscosity during long-term storage and is resistant to spoilage.

As an electrolyte, its viscosity can be influenced by acids and metal ions, which may reduce viscosity. However, when exposed to divalent or higher-valent metal ions, the compound does not decompose.
